From Dishwasher to Chef

Brian Machado is the husband to Christina Machado and the father of Zinedine, Xavier, Emerson and Cruz. His first job in a restaurant was working as a dishwasher in Chatham as at 13 years of age; first at Swiss Chalet, and then at Pranovi’s. Among the soap suds and dirty plates, Brian experienced something special enough to make him want to become a chef.

After high school, Brian pursued a culinary career with great ambition, completing a two-year culinary program, St. Clair College of fine Arts Windsor culinary Program, Following this, he journeyed to work for Volker Jenhoff Canadian Olympic gold medal winning Chef at the Horse & Hound. Then, undertook being Food and Beverage Director at Four Points by Sheraton and later returned to the kitchen as Chef de Cuisine for Executive Chef Antonio Botelho. Next, ventured to Baton Rouge Steakhouses GTA and proceeded to Caesars Windsor as Sous Chef for Executive Chef Raymond Taylor. Brian honed his technical skills by learning from some of the best chefs in the world, also with help from his hospitable family members, offering volunteer work for the Portuguese Community in Chatham Kent Ontario.

Since the restaurant opened, Brian and his family have enjoyed tremendous success, and the restaurant has enjoyed a continuous stream of praise from locals and visitors winning Small Business of the Year in 2017 , winning top 10% restaurants world wide Trip Advisor, 2018-2019 Southwestern Ontario top restaurant. In 2010, the business also expanded to include Four Diamonds Catering with his father Antonio Machado and Executive Chef Matthew Harlick. Throughout the experience, Brian has maintained his commitment to serving top-of-the-line dishes made from quality ingredients. Both the restaurant and catering service have made their mark in Southwestern Ontario, and make a positive statement about the offerings available in Chatham-Kent.
